Dinner "Seto Inland’s Seafood Hotpot"

“Seto Inland’s Seafood Hotpot” can be enjoyed with seafood selected by “Uoharu”, a fish shop in Kurashiki which has continued for over 125 years.

Shabu-shabu the local favorites, Spanish mackerel and red snapper, into soup containing plenty of umami flavors from shrimps and oysters.

Seafood is an excellent match with the “hishio miso” from "Meitou Miso Honpo" in Setouchi, Okayama.

You can enjoy it in any way you like such as dipping vegetables into it or blending it into the soup.

Finish off the meal with “Jyu-ni Mentai”, a soft but chewy Chinese noodle developed by “Fuji Menzu Kobo” which has been producing noodles in Okayama City for over 70 years.

You can adjust the hardness of the noodles to your liking!

Cooking | Preparation

1. Shabu-shabu the Spanish mackerels and red snappers into the soup infused with the umami flavors of shrimps and oysters.

2. When finishing off your meal with Chinese noodles, adjust their hardness to your liking.

3. Hishio miso can be used in any way you like; as a dip or to blend into the soup.


Breakfast "Kojima's Specialty Takomeshi"


Kojima’s octopus fishing quota is among the best in Japan.

Kojima, Kurashiki has a particularly fast tidal current in the Seto Inland Sea. Octopuses grown in the sea nearby are famous for their chewy and firm texture.

A long-time local favorite recipe is the “takomeshi”which is seasoned rice with chopped-up octopuses.

DENIM HOUSE BON’s breakfast serves takomeshi,and side dishes that consist of vinegared “mamakari” (Japanese scaled sardines),Seto Inland’s garaebi shrimp, and seasonal vegetables.

Enjoy a specially made miso soup with garaebi paste added to combined rice koji miso from "Meitou Miso Honpo" in Setouchi, Okayama.

・Vinegared garaebi
・Seasonal vegetables in small bowls


Cooking | Preparation

1. Wash the rice and put the pre-packaged takomeshi ingredients inside, followed by the amount of water mentioned on the bag. Start cooking the rice.

2. Take out the miso from the bottle and pour in a preferred amount of hot water and then you are all ready.
